UPGRADE QUESTION: How to Move Data from Old HardDrive to New HardDrive?

I'm upgrading from an Intel-based system to AMD (based on the AbitKT7 RAID motherboard), which involves replacing my old hard drive with two new hard drives acting as one virtual hard drive (in RAID 0 config.)

1. Is there a safe way for me to move all my 16GB of software & data from my old hard drive to the new one? (Alternatively:)

2. Is there any way for me to have temporary access to the old hard drive for a while within the new system, without making it part of the new system's final configuration?

Any suggestions, hints & tips concerning this will be very much appreciated.
